Well Salem is still WAY behind in the coffee world (as in other worlds??), but I detect little bits of trying:
Recently went to Sweetpea (1205 SE Stark in Portland)–a vegan bakery–this is a soy latte (a little too sweet for me) but it looks pretty good.
the bagels are slathered with tofutti or something like that–tofu cream cheese–no fat, scallion flavored, very good.
