Finding the Christmas Spirit…

First turn on ALL the tree lights

next make a put of tea, carefully choosing the “summer cup” to keep you looking ahead…

plug in the tunes while making lamb/white bean soup:

and MAKE A CARDAMOM CAKE!!! (You won’t be sorry…)

CARDAMOM CAKE (freezes well…)

1/2# butter                            1 t. baking soda

1 c. brown sugar                    2 1/2 t. cardamom

1 c. white sugar                      2 1/2 t. cinnamon

2 eggs                                       3 c. flour

1 c. fat free sour cream          (mix dry ingredients together in small bowl)

1.  Preheat over to 325, pray and flour cake pan (I use old bundt pan)

2.  Cream butter and sugars

3.  Beat in eggs

4.  Alternate dry ingredients with sour cream

5.  Bake 1 hour at 325

6.  Cool on rack in pan for 10 minutes…turn out and cool.

  1. Cardamon cake is also good with chipped cranberries or lingonberries (more authentic if you can find them) in it.

  2. Chopped, not chipped! And I think my recipe calls for canned lingonberries with the cranberries as an alternative, but all I can ever find is lingonberry jam/preserves.

  6. Tracks. Into the woods, and back. A small pile of peels – looks like he’s doing roasted root vegetables in there. Some lights from under the door – guess he’s getting comfy in this winter world.
